Our story

We began as a pop-up cooperative: three chefs, one van, dozens of neighbor markets. Each week we tuned recipes to local harvests and tracked what sold. That experiment became a method: iterate on-site, measure plate yield, standardize execution. Today we bring that same local, iterative discipline to kitchens that want control without losing craft.
